Smoky Baby Blue Taters |
Recipe:
20 new red potatoes washed, dried and halved lengthwise
3 tsp. extra-virgin olive oil
1½ cups light sour cream
1 cup crumbled blue cheese
2/3 cup crumbled cooked bacon
¼ cup fresh curly parsley
¼ cup red onion, finely chopped
Bourbon smoked paprika - made by Bourbon Barrel Foods in Louisville, KY
Seasoning Salt
Dash or two of hot sauce
Preheat oven to 400 degrees. Toss cut potatoes and olive oil in medium sized bowl. Place potato halves cut side down on a baking sheet and bake until skins are crisp (20-25 minutes) and set aside to cool on serving platter.
Scoop the center out of each potato half and place in a medium bowl. Stir in the sour cream, blue cheese, bacon, parsley and red onion. Add seasoning salt and hot sauce to taste. Fill each potato skin with the mixture. Garnish with bourbon smoked paprika and parsley.
